A New Twist on a Classic Weight Loss Diet: Celeriac!


When following a weight loss diet plan, celery is one of the first foods that pops into our heads when we think about “diet food,” but its close relative, celeriac (or root celery) is another flavorful option to this popular vegetable.

Celeriac is grown very similarly to leaf celery, but it is the underground growth that is harvested and eaten instead of the leafy tops. It’s most popular as a winter vegetable, and can be added to soups, stews, or mashed like a potato. This vegetable is actually a member of the carrot family, and thus can be treated like any other rustic vegetable.

Celeriac is perfect for a weight loss diet plan because, like celery, it is very low in calories (it even has a fresh celery-like taste without the grassy texture!) It’s also full of beneficial vitamins and minerals including vitamin K, phosphorous, calcium, and copper, suggesting that it can be a great source for bone and teeth health-promoting nutrients.

The most beneficial element of celeriac, however, is that it’s a rich source of an anti-oxidant called falcarinol. This phytonutrient has been shown to have antimicrobial effects, and can protect us from many diseases including cancer!

Celeriac can be stored the same way as turnips and carrots, and can keep fresh in the refrigerator for up to 3-4 months at 0-5 degrees C. The only preparation it needs is to be lightly scrubbed under cold running water to remove dirt and impurities, and the top layer of skin removed.

Celeriac can be used in place of potatoes in a weight loss diet plan, providing that mashed potato texture for minimum calories and maximum nutrition. So next time you’re in the root vegetable section of your grocery store, pick up celeriac and enjoy that fresh celery taste in a delicious new texture!
